Almond Flour and Fig Cake

Light Brown Sugar | 100 gr | 1/2 cup | Coconut sugar or a brown sugar substitute can also be used. | |
Baking Powder | 6 gr | 1 teaspoon | ||
Olive Oil | 60 gr | 1/4 cup | You can also substitute with melted butter in the same quantity. | |
Vanilla extract | 6 ml | 1 teaspoon | ||
Salt | 3 gr | 1/2 teaspoon | ||
Fresh Figs | 6 | 6 | Make sure they are ripe, tender, and have slight splits at the bottom for the best sweetness. |

Steps:
- Preheat the oven to 350°F (180°C). Grease or line an 8-inch baking pan.
- In a large bowl, beat the granulated Sugar and Egg Yolks until light and foamy.
- Add Vanilla and Oil, continue beating for 2 more minutes.
- Mix in Almond Flour, Baking Powder, and Salt until the batter is smooth.
- In a separate bowl, beat the Egg Whites until stiff peaks form. Fold in 1/3 of the Egg Whites into the batter.
- Then gently fold in the remaining egg whites until just combined.
- Pour the batter into the prepared pan and level the top.
- Arrange the Fig halves, cut side up, on top of the batter.
- Bake for 40-45 minutes, until golden brown and set. Test with a toothpick.
- Allow the cake to cool, then remove it from the pan and enjoy your delicious Almond Flour and Fig Cake!
