Almond Flour and Fig Cake

Blanched Almond Flour175 gr3/4 cups
  • Use Blanched almond flour, not almond meal. The latter makes baked goods heavy and dense, and not what we want for this cake!

Eggs, divided3 3
  • Separate the egg yolks from the whites, using the yolks immediately. Mix the yolks thoroughly with the sugar using a hand mixer, whisk, or stand mixer.

Light Brown Sugar100 gr1/2 cup
  • Coconut sugar or a brown sugar substitute can also be used.

Baking Powder6 gr1 teaspoon
Olive Oil60 gr1/4 cup
  • You can also substitute with melted butter in the same quantity.

Vanilla extract6 ml1 teaspoon
Salt3 gr1/2 teaspoon
Fresh Figs6 6
  • Make sure they are ripe, tender, and have slight splits at the bottom for the best sweetness.

Equipment:

  • 8-inch baking pan

Steps:

Step 1

Preheat the oven to 350°F (180°C). Grease or line an 8-inch baking pan.

Step 2

In a large bowl, beat the granulated Sugar and Egg Yolks until light and foamy.

Step 3

Add Vanilla and Oil, continue beating for 2 more minutes.

Step 4

Mix in Almond Flour, Baking Powder, and Salt until the batter is smooth.

Step 5

In a separate bowl, beat the Egg Whites until stiff peaks form. Fold in 1/3 of the Egg Whites into the batter.

Step 6

Then gently fold in the remaining egg whites until just combined.

Step 7

Pour the batter into the prepared pan and level the top.

Step 8

Arrange the Fig halves, cut side up, on top of the batter.

Step 9

Bake for 40-45 minutes, until golden brown and set. Test with a toothpick.

Step 10

Allow the cake to cool, then remove it from the pan and enjoy your delicious Almond Flour and Fig Cake!
