Steps:
- Preheat the oven to 350°F (180°C).
- In a bowl, combine the sliced Apples, washed Raisins, Lemon Juice, and Cinnamon. Toss gently to coat the apples evenly.
- In a mixing bowl, whisk together the Eggs, Water, and melted Butter. Gradually add the Rice flour and Baking Powder, mixing until smooth.
- Pour the batter evenly over the apple and raisin mixture in the baking dish. If using, add the crumble topping.
- Bake for 45 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Allow the cake to cool slightly before slicing. Enjoy it warm or at room temperature!
- To make the crumble topping, simply combine almond, oat flour, rice flour, brown sugar, cinnamon, chopped walnuts, and cold cubed butter, then rub together until it forms coarse crumbs. Crumble topping will add a perfect contrast to the soft, spiced apples, creating a beautiful texture and extra layer of flavor!
