If you have extra overripe bananas at home, stick it in the freezer with the skin on. Frozen bananas turn dark brown or black, that’s OK. When you’re ready to bake, take out the bananas you need and let them thaw at room temperature. Thawed bananas are very soft and watery, no worries. Squeeze the squishy dark bananas into your mixing bowl, include any liquid and now go bake.
Oat Flour50 gr1/2 cup
Making homemade oat flour couldn't be easier! All you need is whole rolled oats (not steel-cut or quick oats) and a food processor, coffee grinder or high-speed blender. Place the oats in the blender or food processor and blend until they form a fine flour, stopping to stir occasionally. That's it!

½ cup sugar free chocolate chips
½ cup nuts, chopped: walnuts, peanuts, pecans
½ teaspoon cinnamon
½ cup raisins

Equipment:

Blender or hand mixer
8 x 8-inch baking pan

Steps:

  1. Preheat the oven to 325 °F/ 160°C and line an 8 x 8-inch baking pan with parchment paper.
  2. Make a flax egg: In a small bowl mix together the ground flaxseed (2 tbsp) and warm water (6 tbsp) until combined. Allow the mixture to sit for about 5 minutes, stirring halfway through, until it has thickened. Stir again before using.
  3. In a high-speed blender put bananas (3), flax eggs, nut butter (¼ cup). Blend until smooth.
  4. Mix the dry ingredients: In a medium bowl add almond flour (1 cup), oat flour (1 cup ), cacao (½ cup), baking powder (1 tsp), salt (½ tsp). Whisk to combine.
  5. Incorporate the egg mixture in the dry ingredients and stir until just combined.
  6. Transfer batter into the prepared 8 x 8-inch baking pan.
  7. Bake for 40-50 minutes at 325 °F/160°C until a toothpick inserted in the center comes out clean.
  8. Let brownies rest in the pan for 30 minutes, then lift out by parchment paper. Allow to cool completely before cutting. Enjoy!
