Buckwheat Vegan Pancakes

Hulled Buckwheat Groats, soaked overnight180 gr1 cup
Make sure you're using hulled non roasted buckwheat.They'll be a light brown or a little greenish in color. Raw Hulled buckwheat groats have a mild taste which is perfect for baked goods.

Plant-Based Milk120 ml1/2 cup
You can use coconut milk, almond milk or just water.
Baking Powder3 gr1/2 teaspoon
Salt3 gr1/2 teaspoon

Optional Ingredients :

6 gr / 1 tsp Cinnamon

Steps:

  1. Rinse and soak Buckwheat Groats (1 cup) overnight.
  2. Drain and rinse once more the soaked buckwheat.
  3. In a blender add soaked Buckwheat, Banana (1), Coconut Milk (1/2 cup) and Baking Powder ( 1⁄2 tsp), salt (1/2 tsp).
  4. Blend until you have a smooth batter. Leave to stand for 10 minutes.
  5. Heat a non-stick skillet over medium heat. Once hot, pour about 1/3 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes, until golden brown and cooked through.
  6. Transfer the cooked pancakes to a plate and repeat the process with the remaining batter. Serve the pancakes while still hot with your favorite toppings or on their own.
