Chia Seed Jam with Frozen Fruit
This is a quick and easy way to make some delicious homemade jam. The flavor definitely depends on the fruit that you use. Super easy to make, just frozen fruit, chia seeds and a bit of apple juice. It is great on waffles, on Buckwheat Crepes Savory or Almond Flour Pancakes Egg, mixed in with an oatmeal, or even on top of ice cream! So healthy and delicious!!!

Ingredients:

Frozen Fruit mix300 gr2 cups
Berries/Fruits that work well in chia seed jam are strawberries, blackberries, blueberries, raspberries/ cherries, peaches, apricots, plums, pineapple, kiwi…basically any “juicy” fruits.
Chia seeds, plus more if needed30 gr2 tablespoons
The best ratio of fruit to chia seeds is two cups of fruit to 2 tablespoons of chia seeds. Start with this ratio, then if your fruit was very juicy or you’d like a thicker consistency, stir in more chia seeds one teaspoon at a time.
Apple Juice, to taste15 ml1 tablespoon
You can use: lemon juice, orange juice, pineapple juice, maple syrup

Equipment:

Blender or hand mixer, optional

Steps:

  1. Thaw the berries in a saucepan on medium heat. When softened, mash with a fork or spatula allowing some chunks to remain.
  2. Remove from the heat and stir in the chia seeds and juice. Keep in mind that different kinds of fruit will yield different textures, flavors, etc. So taste and adjust your jam as needed.
  3. Let sit at room temperature for 30 minutes for the chia seeds to gel, stirring once halfway.
  4. Once the jam has cooled to room temperature, transfer it to a jar and store in the fridge for about 2 weeks. The jam will thicken further and become more set once completely chilled. The jam can also be frozen for up to 3 months; thaw in the fridge before using.
