Golden Flaxseed Psyllium Husk Bread
With only 3 ingredients easy to make, just stir with a spoon and then shape it by hand this flaxseed bread is dense, soft, and moist. Is gluten-free, wheat free, sugar-free, oil-free, yeast-free, egg-free and dairy-free(vegan) bread, also high in fiber and high-quality, plant-based protein, which means it contains notable amounts of all nine essential amino acids.

Whole golden flaxseed250 gr1 1/2 cups
1. The cup measurements are for the whole flax seed that needs to be grind into flour, which is 2 ⅓ cups + 1 tbsp golden flaxseed meal.
2. Use home-ground flax seed, the finer the flaxseed meal, the better bread will hold together. If you are not sure your flaxseed meal is fine enough, sift it. If the flaxseed is not fine enough, the inside of the bread will pull away from the crust.
3. Note, flaxseed become rancid quickly and become bitter, taste the seeds before grinding, they should have a mellow, nutty flavor and aroma.
Warm water (~ 104°F/40°C)320 ml1 1/3 cups
You can use hot water, it helps the dough become more pliable.
Psyllium husk powder40 gr4 tbsp
If you don’t have psyllium husk powder, you can easily make it at home. Simply grind whole psyllium husks in a coffee grinder or blender until they form a fine powder.
Baking powder12 gr2 tsp
Salt3 gr1/2 tsp
You don’t have to use salt, but the bread will taste quite bland.

Optional Ingredients :

Seeds / Spices: sesame seeds, poppy seeds, hemp seeds, sunflower seeds, toasted sesame seeds, pumpkin seeds, caraway seeds, cumin seeds, herbs.

Steps:

  1. Preheat the oven to 350 °F/180°C, line a baking sheet with parchment paper or a silicone mat and get ready all ingredients you need for this recipe.
  2. Grind the whole golden flaxseed (240 gr / 1 ½ cups) into very fine flour. If you are not sure your flaxseed meal is fine enough, sift it.
  3. In a medium bowl, mix together dry ingredients: the flaxseed meal, psyllium husk powder (40 gr / 4 tbsp), baking powder (12 gr / 2 tsp), and salt (3 gr / 1⁄2 tsp).
  4. Add warm water (320 ml / 1 1/3 cups warm water) and mix with a spoon until the flaxseed meal becomes sticky and holds together in a lump for some seconds. Then use your hands to roughly form a dough into a loaf shape. Don't over-knead the dough, this will result in a dense, flat loaf.
  5. Transfer the bread dough to the prepared baking sheet (lined with parchment paper or silicone mat). Wet the top of the dough and sprinkle it with extra whole flaxseed or sesame.
  6. Bake the bread for 50 minutes at 350 °F(180°C) until a toothpick inserted into the middle comes out clean.Note that it might take less or longer as each oven is different!
  7. Finally, transfer it to a wire rack to cool completely before slicing and enjoying!
