| Raw Seeds / Nuts, of your choice | 1 1/2 cups | 1/2 cup walnuts or pecans, 1/2 cup sunflower seeds, 1/2 cup pumpkin seeds |
| Raisins | 1/4 cup | or you can use dry cranberries |
| Ground Cinnamon | 1 teaspoon | |
| Salt | 1/2 teaspoon | |
| Dates | 10 | If you prefer a sweeter granola, simply increase the number of dates in the paste to suit your taste. |
| Water | 1/2 cup | |
| Almond Butter | 3 tablespoons |
Equipment:
- Blender
Steps:
- Preheat the oven to 330°F (165°C) and line a baking sheet with parchment.
- In a blender, combine the Dates, Water, and Almond Butter. Blend until you achieve a smooth, thick paste. The sweetness of the granola comes from this paste, offering a subtle, natural flavor. If you prefer it sweeter, add a few extra dates to the mix.
- In a large mixing bowl, combine the oats, seeds, nuts, ground cinnamon, and salt. Stir to evenly distribute the dry ingredients.
- Pour the date paste into the bowl with the dry ingredients. Stir well until the oats, seeds, and nuts are fully coated with the paste.
- Transfer the mixture onto the prepared baking sheet. Spread it out into an even layer, pressing gently to create clusters.
- Bake in the preheated oven for 30-35 minutes, stirring halfway through to ensure even toasting. The granola should be golden brown and fragrant.
- Remove the baking sheet from the oven and let the granola cool completely. As it cools, it will become crisp. Once cooled, stir in the raisins for a touch of natural sweetness.
- Enjoy this granola with plant-based milk, sprinkle it over yogurt, or simply snack on it straight from the jar for a crunchy, nutritious treat!
