Oatmeal Crepes
You’ll never make a flour crepe again! Oat crepes are pliable and flexible, making them easy to roll or fold around fillings without cracking or breaking. Their soft texture allows them to mold to the shape of the fillings, creating a cohesive and visually appealing presentation. Oat crepes serve as a versatile base for a wide range of fillings and toppings. Their mild and nutty flavor allows them to complement various ingredients, from sweet fruits and jams to savory vegetables and meats. Making homemade oat flour couldn't be easier! All you need is whole rolled oats and a food processor or high-speed blender or coffee grinder. Place the oats in the blender or food processor and blend until they form a fine flour, stopping to stir occasionally.
Eggs2 2
Milk/Water300 ml1 1/4 cups
You can use dairy or nondairy milk.
Salt3 gr1/2 teaspoon

Optional Ingredients for sweet version:

3 ml / ½ teaspoon Vanilla
15 gr / 1 tbsp Sweetener ( Maple Syrup, Honey or Coconut Sugar)
3 gr / ½ teaspoon Cinnamon

Steps:

  1. Prepare all the ingredients.
  2. In a high-speed blender put oat flour (100 gr), milk/water (11/4 cups), eggs (2) and salt (½ teaspoon). Blend until smooth. Crepe batter should have the consistency of heavy cream, almost liquid.
  3. Allow the batter to rest for 10 minutes.
  4. Meanwhile preheat a crepe pan or non-stick skillet over medium heat (for about 5 minutes). This step is very important, so crepes will not stick to the pan! The pan should be heated to medium before adding the batter. If the heat is too high, the batter won’t spread to the edges of the pan before setting.
  5. Brush the pan very lightly with oil.
  6. Coat the pan with about 1/3 cup of crepe batter, cook until the edges start to brown, then flip the crepe. Cook for 10 more seconds and remove from the pan.
  7. Continue with the rest of the batter, adjusting heat up or down. Mix crepe batter before pouring each batch into the pan or all the oatmeal flour will run to the bottom of the bowl. Simple solution but very important. You should yield about 8 crepes.
  8. Transfer the cooked crepes to a large plate and serve with your choice of fillings or toppings!
