Steps:
- Preheat your oven to 180°C (350°F). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
- Wash, pit, and slice the plums. Arrange the plum slices evenly in the bottom of the prepared cake pan.
- Bake the plums in the preheated oven for 10-15 minutes, or until they start to soften.
- While the plums are baking, prepare the crumble topping. In a medium bowl, combine the rice flour, oat flour, almond flour, and brown sugar. Cut the butter into small pieces and add it to the dry ingredients. Use your fingers or a pastry cutter to work the butter into the flour mixture until it resembles coarse crumbs. Stir in the almond flakes.
- After the plums have baked and softened, remove the pan from the oven. Evenly sprinkle the crumble topping over the partially baked plums.
- Return the pan to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown and the plums are bubbling.
- Serve warm or at room temperature. Enjoy it plain or with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
