Ingredients:

NameMetricUSTIP
Rice Flour110 gr3/4 cup
You can use White Rice Flour or Brown Rice Flour.
Oat Flour50 gr1/2 cup
Making homemade oat flour couldn't be easier! All you need is whole rolled oats and a food processor or high-speed blender or coffee grinder. Place the oats in the blender or food processor and blend until they form a fine flour, stopping to stir occasionally.
Banana1 1
Plant-based Milk395 ml1 2/3 cups
You can use Almond milk, Oat milk, Coconut Milk or substitute with water.
Ground Flaxseeds6 gr1 teaspoon
Salt3 gr1/2 teaspoon
Ground Cinnamon3 gr1/2 teaspoon

Optional Ingredients for Caramelized Apple:

1 Apple, peeled, cored, and cut in 1/4-inch thick slices
1 tsp Brown Sugar
1/4 tsp Cinnamon
1/4 tsp Salt

Equipment:

Blender

Steps:

  1. Gather all of the ingredients.
  2. In the blender, add Rice Flour (110 gr), Oat Flour (50 gr), Milk (395 ml), Ground Flaxseeds, Cinnamon, Salt and Banana. Blend until smooth. Allow the batter to rest for 10 minutes. This helps thicken it.
  3. Meanwhile preheat a non-stick skillet over medium heat (for about 5 minutes). This step is very important, so crepes will not stick to the pan! The pan should be heated to medium before adding the batter. If the heat is too high, the batter won’t spread to the edges of the pan before setting. Brush the pan very lightly with oil
  4. Coat the pan with about 1/3 cup of crepe batter, cook until the edges start to brown, then flip the crepe. When flipping the crepe, make sure the edges are easy to slide under. Cook for 30 more seconds and remove from the pan.
  5. Continue with the rest of the batter, adjusting heat up or down. Mix crepe batter before pouring each batch into the pan or all the flour will run to the bottom of the bowl. Simple solution but very important. You should yield about 8 crepes.
  6. Transfer the cooked crepes to a large plate and serve with your choice of fillings or toppings!
  7. Try Caramelized Apples on top of these delicious crepes: Melt 1 tbsp of Coconut Butter in a skillet over medium-high heat. Add Brown Sugar, Ground Cinnamon, and Salt. Stir to dissolve the sugar. Add the apples and stir to coat. Cook, stirring regularly until the apples are tender and lightly browned around the edges and the syrup is thickened and glossy, 5 minutes.
