Rustic Apple Cake is one of those simple, comforting desserts that always makes you feel at home. Ingredients:

or 2 tbsp honey. Feel free to adjust the sweetness according to your taste.
Baking Powder6 gr1 teaspoon
Apples, cored and thinly sliced300 gr3
It's about 3-4 medium apples. Make sure to use ripe apples.
Lemon Juice, optional15 ml1 tablespoon
The lemon juice not only keeps the apples looking fresh but also adds a subtle brightness to the flavor.

Optional Ingredients :

6 gr / 1 tsp Vanilla Extract
6 gr / 1 tsp Ground Cinnamon

Steps:

  1. Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) baking dish with parchment paper or lightly grease it.
  2. Wash, core, and slice your apples into thin wedges. Place the slices in a bowl and drizzle them with lemon juice to prevent browning. Set aside.
  3. In a mixing bowl, beat the eggs for about 5 minutes until they triple in volume and become light and frothy.
  4. In a separate bowl, mix the rice flour, corn flour, baking powder, and coconut sugar (if using honey, add it to the egg mixture).
  5. Gradually add the dry ingredients to the egg mixture, folding gently to keep the batter airy.
  6. Pour half of the batter into the prepared dish, layer in half of the apple slices, and pour the remaining batter on top. Arrange the remaining apple slices in a pretty pattern on top of the batter for a rustic, charming look.
  7. Place in the oven and bake for 40 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
  8. Let the cake cool for a few minutes, then slice and serve. It’s delightful as is or with a dusting of powdered sugar!
