Making homemade oat flour couldn't be easier! All you need is whole rolled oats and a food processor or high-speed blender or coffee grinder. Place the oats in the blender or food processor and blend until they form a fine flour, stopping to stir occasionally.
Chickpea Flour60 gr1/2 cup
Chickpea flour cannot be substituted with chia or flax eggs. It works as a very specific egg substitute.
Water330 ml1 1/2 cups
You can use nondairy milk.
Salt3 gr1/2 teaspoon
Nutritional Yeast, optional11 gr1 tablespoon

Optional Ingredients for sweet version:

3 ml / ½ teaspoon Vanilla
15 gr / 1 tbsp Sweetener ( Maple Syrup, Honey or Coconut Sugar)
3 gr / ½ teaspoon Cinnamon

Equipment:

Blender or Hand Mixer
Crepe Pan or Non-Stick Skillet

Steps:

  1. In a mixing bowl, combine oatmeal flour (¾ cup), chickpea flour (½ cup), water (11/2 cups), nutritional yeast (1 tablespoon) and salt (½ teaspoon). Whisk together until smooth and well combined. The batter should be thin enough to easily spread on the pan but not too runny.
  2. Allow the batter to rest for 10 minutes.This allows the oat flour to fully hydrate and results in a smoother batter.
  3. Meanwhile preheat a crepe pan or non-stick skillet over medium heat (for about 5 minutes). This step is very important, so crepes will not stick to the pan! The pan should be heated to medium before adding the batter. If the heat is too high, the batter won’t spread to the edges of the pan before setting.
  4. Brush the pan very lightly with oil.
  5. Coat the pan with about 1/3 cup of crepe batter, cook until the edges start to brown, then flip the crepe. Cook for about 10 more seconds and remove from the pan.
  6. Continue with the rest of the batter, adjusting heat up or down. Mix crepe batter before pouring each batch into the pan or all the oatmeal flour will run to the bottom of the bowl. Simple solution but very important. You should yield about 8 crepes.
  7. Transfer the cooked crepes to a large plate and serve with your choice of fillings or toppings!
  8. Serve the filled crepes immediately and enjoy!
