Use Blanched almond flour, not almond meal. The latter makes baked goods heavy and dense, and not what we want for this cake!
Eggs, divided3 3
Separate the egg yolks from the whites, using the yolks immediately. Mix the yolks thoroughly with the sugar using a hand mixer, whisk, or stand mixer.
Light Brown Sugar100 gr1/2 cup
Coconut sugar or a brown sugar substitute can also be used.
Baking Powder6 gr1 teaspoon
Olive Oil60 gr1/4 cup
You can also substitute with melted butter in the same quantity.
Vanilla extract6 ml1 teaspoon
Salt3 gr1/2 teaspoon
Fresh Figs6 6
Make sure they are ripe, tender, and have slight splits at the bottom for the best sweetness.

Equipment:

8-inch baking pan

Steps:

  1. Preheat the oven to 350°F (180°C). Grease or line an 8-inch baking pan.
  2. In a large bowl, beat the granulated Sugar and Egg Yolks until light and foamy.
  3. Add Vanilla and Oil, continue beating for 2 more minutes.
  4. Mix in Almond Flour, Baking Powder, and Salt until the batter is smooth.
  5. In a separate bowl, beat the Egg Whites until stiff peaks form. Fold in 1/3 of the Egg Whites into the batter.
  6. Then gently fold in the remaining egg whites until just combined.
  7. Pour the batter into the prepared pan and level the top.
  8. Arrange the Fig halves, cut side up, on top of the batter.
  9. Bake for 40-45 minutes, until golden brown and set. Test with a toothpick.
  10. Allow the cake to cool, then remove it from the pan and enjoy your delicious Almond Flour and Fig Cake!
