Almond Flour Cauliflower Bread

  • Almonds contain phytic acid, which may impair your zinc, iron, and calcium absorption. However, almond flour contains a lot less phytic acid than most flours, including wheat flour. The process of blanching almond flour gets rid of most of the phytic acid. In general, almond flour is good for you!

Psyllium Husk Powder35 gr1/4 cup
  • Psyllium Husk Powder can sometimes result in your bread being darker in color (either brown or with a slightly purple-ish tinge).

Cauliflower Rice125 gr1 cup
Eggs, beaten5 5
Baking Soda3 gr1/2 teaspoon
Salt3 gr1/2 teaspoon

Optional Ingredients :

  • 6 gr/ 1 tablespoon Sunflower Seeds
  • 6 gr/ 1 tablespoon Pumpkin Seeds

Equipment:

  • Blender
  • Loaf pan 8.5in x 4.5 inch / 21.5cm x 11.5cm

Steps:

Step 1

Preheat the oven to 350°F. Line a loaf tin with parchment paper. Set aside.

Step 2

Wash the cauliflower and cut it into florets. Pulse the florets in a food processor until they resemble fine crumbs.

Step 3

In a large bowl mix the almond flour, psyllium husk, salt and baking soda.

Step 4

Fold in the beaten eggs and cauliflower rice, mix until the batter is smooth.

Step 5

Make a slight well in the dry ingredients and mix in the egg mixture until just combined.

Step 6

Transfer the batter to the prepared pan. Smooth the top out with a spatula and sprinkle the pumpkin seeds and sunflower seeds over the top.

Step 7

Bake for 55 minutes, until the bread is browned on top.

Step 8

Remove from the oven and allow to cool before slicing
