Almond Flour Flaxseed Bread
This simple, grain-free, dairy-free, gluten-free Almond Flour Flaxseed Bread is easy to make and tastes absolutely delicious. Almond flour is a good source of protein and fiber and gives a moist texture to bread. Even if it’s your first time trying it out, you can expect results that look and taste professional. It is perfect for toast and sandwiches.

Can almond flour be bad for you? Almonds contain phytic acid, which may impair your zinc, iron, and calcium absorption. However, almond flour contains a lot less phytic acid than most flours, including wheat flour. The process of blanching almond flour gets rid of most of the phytic acid. In general, almond flour is good for you!
Ground Flaxseed30 gr1/4 cup
Use home-ground flax seeds, the finer the meal, the better bread will hold together. Note, flaxseed become rancid quickly and become bitter, taste the seeds before grinding, they should have a mellow, nutty flavor and aroma.
The recipe will work with golden flax seeds too, the bread will turn lighter.

You can use any mild-flavored oil, such as coconut oil, extra virgin olive oil, grapeseed oil, or avocado oil, will do.
Baking Soda3 gr1/2 tsp
After you mix baking soda (base) with apple cider vinegar(acid), you get a chemical reaction and a product of this is carbon dioxide, producing a lift in your baked goods. The reaction starts as soon as the base and the acid are mixed. So get the bread in the oven immediately after you mix the two, before the reaction tapers off.
Baking Powder6 gr1 tbsp
This Gluten Free Almond Flour Flaxseed Bread uses baking powder and baking soda to provide necessary lift and lighter texture.
Apple Cider Vinegar or Lemon Juice15 ml1 tbsp
You can use any vinegar. Baking soda needs an acidic ingredient to produce carbon dioxide. The small bubbles of carbon dioxide gas become trapped in the dough, causing it to rise.
Maple Syrup (or honey), optional20 gr1 tbsp

Optional Ingredients :

6 gr / 1 tablespoon nutritional yeast
6 gr / 1 tablespoon hemp seeds
6 gr / 1 tablespoon garlic powder
6 gr / 1 tablespoon sesame seeds

Equipment:

Loaf pan 8 x 4 inch

Steps:

  1. Preheat the oven to 350 °F/180°C and line the bread pan 8’ x4’ with parchment paper or just oil it, and sprinkle with sesame or ground oatmeal.
  2. In a medium bowl, whisk together eggs (2), egg whites (3), oil (50 gr), apple cider vinegar (1 tbsp), and maple syrup (1 tbsp) until emulsified.
  3. In a large bowl, mix the almond flour (2 cups), ground flaxseed (¼ cup), baking soda (½ tsp), baking powder (1 tsp) and salt (½ tsp).
  4. Make a slight well in the dry ingredients and mix in the egg mixture until just combined.
  5. Spread the batter in the prepared loaf pan and smooth the top, sprinkle with seeds, if using.
  6. Bake at 350°F (180°C) for about 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let it cool in the pan for 15 minutes, then transfer the loaf to a cooling rack to cool off completely before slicing.
