You can use rolled oats to make oat flour at home. Blend the oats until they reach a fine, flour-like consistency. This usually takes about 1-2 minutes depending on your blender or food processor. If you want a very smooth flour, you can sift the ground oats through a fine mesh sieve to remove any larger pieces that didn't grind finely enough.
Psyllium Husk26 gr1/3 cup
Psyllium husk and psyllium husk powder are the same product. The only difference is that one has been run through a grinder of some sort to turn it into a powder! Psyllium husk powder is finer, so it has more surface area to help absorb water. You generally need less of it than whole psyllium husk.

You might need a little bit more water 1 or 2 tablespoon if the batter too dry.

You can sub it with 6gr / 1 tsp Baking Soda + 1 tbsp Vinegar/Lemon Juice

30 gr / 2 tbsp Mixed Seeds (Sunflower Seeds, Pumpkin Seeds, Hulled Hemp Seeds)
2 tbsp / 10 gr Rolled Oats as a topping

Equipment:

Hand Mixer / Stand Mixer fitted with a dough hook
Loaf pan 8.5in x 4.5in / 21.5cm x 11.5cm

Steps:

  1. Preheat the oven to 395°F ( 200°C ).
  2. In a large bowl, sift the Oat Flour (3 cups), Baking Powder ( 2 tsp ), and Salt ( 3 gr ). It ensures that the salt and baking powder are evenly distributed throughout the flour.
  3. In a separate bowl, mix the Psyllium Husk (⅓ cup ) with Water (1 ¼ cup). Immediately begin stirring vigorously with a spoon. It’s important to mix it well and quickly to prevent clumping. Let this mixture sit for 15-30 seconds.
  4. Add the Psyllium Husk Gel to the dry ingredients. Knead by hand, until a smooth dough forms and starts coming away from the bowl (about 5 minutes). If the dough is too dry add more water (1-2 tbsp) until all the flour are incorporated. Now mix in seeds until equally distributed (if using). It's okay if the dough appears thick and sticky a little bit.
  5. Shape it as desired and transfer the bread into a prepared loaf pan or baking tray. Then brush the top of the loaf with water and sprinkle it with rolled oats.
  6. Place the pan in the preheated oven and bake for 50-60 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. Once cooled, slice the oat and psyllium husk bread and serve it with your favorite toppings or enjoy as is!
